Tostadas y Salsa (…dancing)

We signed up to take a “cooking” class in Cabo.  Ironically there is no heat involved in any of the classes. At least not in the food we prepare.  They have salsa, ceviche, and today’s class would be tostadas. One bonus to taking the class is that they serve free IMG_5662margaritas with the class.  Something about drinking and “safety concerns,” although they don’t seem to be bothered by the knives.  The other bonus, however… is Abi.

AbiAbi is the young woman in charge of on-site activities, and our “cooking” classes. She is a bundle of fun & energy.  The best part of the class is watching her cheerfully salsa dance her way through a tostada.

IMG_5664In this class, she explained how her family makes tostadas as little snacks to keep the family busy while the cook finishes the main meal.  Whether it’s a snack, or the main dish, this is a super simple crowd pleaser (which gets tastier the more  you “salsa”).

Abi’s Easy Chicken Tostadas

  • IMG_5665Tortilla shell, fried (or you can purchase them)
  • Warm Refried black beans, canned (*)
  • Warm Rotisserie chicken, shredded
  • 1/4 head of Lettuce, thinly sliced
  • 1 tomato, thinly sliced
  • 1/2 onion, thinly sliced
  • Salsa
  • 1 avocado, thinly sliced
  • Sour cream
  • Salt & Pepper
  • Limes, quartered

Assemble the tostadas, by placing a layer of beans on the tortilla shell, then adding chicken, lettuce, tomato, onion, salsa, and avocado.  Top with sour cream and a sprinkle of salt, pepper and a squeeze of lime juice.
