At 6:00pm (sharp, she’s never late) last Thursday, a beautiful red bike carried our neighbor to our side door. A series of texts about the lack of enthusiasm about Thursday had turned into an impromptu celebration of Thursday at our place.
The introduction of “Throwback Thursday” has given us some reason to celebrate the day, but in general, it’s just the day before Friday. We were going to change that, at least on this Thursday. Jess brought over some beers she had received as gifts to taste and share, we supplied the food. We sat around our small kitchen island and chatted about our week (so far), and tasted the various beers while I cooked dinner.
I wanted something super simple and low carb, so I made grilled chicken with steamed veggies. Sounds blah, right? This was a party, soooo… I made Tequila Grilled Chicken. I have to say, it was really moist and tender. Very flavorful, and very light. Perfectly complemented those beers, too.
So, if you’re in need of a Thursday celebration, text your neighbor and bring out the Tequila and beer. Cheers!
Tequila Grilled Chicken
Marinade:
- 2 Tbsp Dijon mustard
- 1 Tbsp honey
- 2 tsp salt
- 1 tsp pepper
- 3/4 c tequila
- 1/4 c olive oil
- 1/4 c champagne vinegar
- 1 stick rosemary, diced
- 10 sticks thyme, stripped and diced
- 3 garlic cloves, diced
- 4 chicken breasts, cut in half lengthwise
Put all marinade ingredients in a gallon size zip top bag, and mix. Add the chicken and cover with the marinade. Allow the chicken to marinate for about 45 minutes to 1 hour. Grill the chicken over high heat for about 5 minutes per side or until done.
Serves 4.
