Dinner for One

Alex was travelling this week, so armed with some chicken breasts, and peanut butter (purchased for the Dog Treats), I made my dinner for me, myself & I.  Low carb, almost no dishes, super delish.  Bonus: I had left overs for lunch!

Grilled Chicken Satay Salad

  • 1 Tbsp fresh ginger, gratedimg_4508
  • 1 garlic clove, grated
  • 1 Tbsp lime
  • 1 Tbsp Sriracha
  • 3 Tbsp soy sauce
  • 1 tsp sesame oil
  • 2 Tbsp peanut butter
  • 1 tsp mirin
  • 1 Tbsp ponzu
  • 2 green onions, chopped
  • 1 lb chicken breasts, thinly sliced
  • 1/4 cabbage, sliced thin

Preheat your grill.  In a small bowl, combine ginger, garlic, lime, sriracha, soy sauce, sesame oil, peanut butter, mirin, and ponzu.  Stir to combine.  Heat in the microwave for 30 seconds to mix in the peanut butter fully, and then and half the onions.

In a plastic zip to bag, add the chicken and half the peanut butter sauce.  shake to cover the chicken.  Grill the chicken, about 5 minutes per side.

Slice the chicken and place on top of cabbage, drizzle with remaining sauce, and sprinkle with the remaining onions.

Serves 2-3.
