What’s silky, creamy, sweet and tart? An avocado, of course!
A smaller version of the Breakfast Club reconvened one fine Sunday morning at our house. The buffet was filled with Flora Inspired Bloodies, mimosa’s, souffléd eggs, truffled popovers, fruit, sausage, bacon (2 kinds), and veggie grits. Because I had some extra time, and some extra avocados, I decided to throw in a surprise…

AVOCADO PIE. Yes! Avocado! I’m telling you. It’s just like a key lime pie, but healthier. Dare to surprise your next Breakfast Club? Here’s the recipe.
Avocado Pie with Pecans
Filling:
- 2 avocados
- 7 oz silken tofu
- 5 limes, juiced
- 1/3 c honey
- 1/4 tsp salt
In a blender, puree all ingredients until smooth. Pour into a Graham Cracker Crust. Refrigerate until it firms up (overnight) or freeze.
Graham Cracker Crust
Toppings:
- 2 c whipped cream
- 1/2 c toasted pecans
When ready to serve, top with whipped cream and toasted pecans.
