Under a palapa, nothing beats a mango margarita, but on this day, I wanted to try something new. Something not quite as sweet, but equally refreshing. Something a little healthier. (OK, I know we are talking margaritas, but I was on vacation, so don’t judge). This is when Ulysses, my palapa tender, introduced me to the Cucumber Mint Margarita. Simple, fresh and revitalizing. It felt healthy, and left me feeling like I went on a spa-cation. So much so, I think I’ll have another, por favor.
Cucumber Mint Spagarita
- 3 oz tequila
- 1 ½ oz Grand Marnier
- A splash of creme de menthe
- 1 small cucumber (Persian), peeled
- ¼ c mint
- 2 tbsp honey (or agave syrup)
- ¼ c lime juice (about 4-5 limes)
- 1 c ice
In a blender, add all ingredients and blend until smooth. Rub a lime on a margarita glass and dip into salt. Pour margarita into a salt rimmed glass.
