I’ve lost count of how many garden swaps we have had. Over 20, now. Each one better than the last. This most recent one, hosted by George & Sherri was one of the most bountiful yet. So many beautiful home grown and home made goodies to choose from… and the food. OMG.
For our first garden swap of the spring, I made Strawberry Puffs with Mascarpone Whipped Cream. Watch out! These little puffs are addictive!
Strawberry Puffs with Mascarpone Whipped Cream
- 10 large strawberries, sliced
- 8 oz mascarpone
- 1 tsp vanilla paste
- 1/2 c half & half
- 1/4 c powdered sugar
- Lemon curd
- 25 Pâte à Choux puffs
In a medium mixing bowl, combine the mascarpone, half & half, vanilla paste and powdered sugar. Beat with a mixer until thick peaks form (about 5 minutes).
Pipe a bit into the middle of each puff, and top with a couple strawberry slices & lemon curd.
