Fruit of Unusual Size

In my CSA delivery, I received the most gigantic mango you have ever seen.  It must have weighed at least two pounds!  Combine that with the giant pomegranates from my neighbor, and I was beginning to worry that alien gigantic fruits were about to take over the world…

Or perhaps someone has regulated my view of fruits by carefully controlling what arrives at the local grocery store.  Do all lemons not come in precisely the same shape, size and color?  Apparently not!

So, to celebrate that mango, Mila’s Pomegranates, and my neighbor’s tiny little perfect habanero from the Garden Swap, here’s what I concocted.  The flavor was as huge as that mango.  Enjoy!

Mango & Pomegranate Salsa

  • img_77572 small mangoes, diced (or one very large mango)
  • ½ c red bell pepper, diced
  • ¼ c red onion, diced
  • 1/3 c pomegranate seeds
  • 1 habanero pepper, seeds removed, minced
  • 1 lime, juiced
  • ¼ c cilantro, chopped

In a medium bowl, combine mangoes, bell pepper, onion, pomegranate seeds, habanero pepper, lime juice and cilantro, and stir to combine.  Serve with roasted chicken or grilled fish.
